{Grain-free} Apple-Walnut Slice

I’m not particularly fond of apples in baked goods, but this seemed a simple one to make that I’ve found on a Hungarian site here and contains only whole ingredients. It turned out to be a nice grain free, paleo snack. It is also good if you have PCOS as it won’t raise sugar levels and provides you with a balanced treat.

Ingredients

  • 3 apples
  • 300 g ground walnuts
  • 2 tbsp coconut sugar
  • 2 tsp ground cinnamon
  • 2 tsp bicarbonate soda
  • zest of 1 lemon
  • 100 g raisin or I used few dates instead
  • 4 eggs
  • 2 tbsp honey
  • 50 g coconut oil
  • you can top it with some powdered xylitol

Method

Peel the apples and grate them. Mix the dry ingredients – walnut, sugar, cinnamon, bicarbonate soda, lemon zest and dates. Mix the eggs with a hand mixer and add 1 tablespoon honey, the grated apple (squeeze out the moisture), and fold in the dry mixture as well. Pour the mix in a baking pan on baking sheet. Heat the coconut oil with the rest of the honey, and brush it on top of the cake. Bake the cake in preheated oven at 180 C, in about 1 hour. You can cover it at half time. After cooling, cut to pieces and sprinkle with xylitol.
