Vegan Cauliflower Leek Cream Soup

Easy vegan cream soup.
Ingredients
  • Half cauliflower
  • 1 leek
  • 1 zucchini
  • 1 small onion
  • 1 tbsp coconut oil
  • 1 organic vegetable stock (optional)
  • Salt, herbs of your choice
  • 100-150 ml coconut milk
Instructions
  1. Sautee the leek and onion with the oil.
  2. Add the zucchini and cauliflower and some water to cover.
  3. Add the vegetable stock if you wish, plus the spices.
  4. Add the coconut milk at the end and blend the soup.
